It’s time for delicious springtime recipes good enough to serve at our Cape May restaurant. Nothing says spring like the light and bright flavors of fresh fruits and vegetables, seafood, and zesty pasta. That’s why we’ve put together this collection of some favorite outstanding Jersey Shore seaside recipes from Cooking Light and My Recipes (among others) that you can make at home.

 

Cocktails

Grilled Pineapple Lemonade

This creative take on classic lemonade features a marriage of fruity and smoky flavors. You can use an indoor grill pan or an outdoor grill for stronger notes of smoke. Add a boozy twist with a little rum or tequila. 

 

Strawberry-Lime Rickey

Try a new approach to lovely Lime Ricky. This recipe packs a springtime punch with an infusion of ripe strawberries. Tangy and sweet, balanced with gin and spritzy soda, the Strawberry Lime Rickey is a tasty way to ring in spring.

Five-onion soup

Topped with Gruyère, the ultimate melting cheese, you’ll love this version of French onion soup that’s especially rich and deep in flavor.

 

All Green Things Salad

Full of lovely textures ranging from crunchy to creamy, this salad is finished with a zesty lemon dressing. Blanch, drain, and chill the peas and asparagus up to 2 before you assemble, but combine all elements shortly before serving. This will preserve the color of the avocado and crunch of the greens.

 

Green Pea and Parsley Hummus

For a fresh take on traditional hummus, ditch the chickpeas and make this green pea dip instead. Serve with your favorite crackers, pita, or fresh cut vegetables, raw or lightly steamed.

 

Broccoli, Cheddar, and Brown Rice Cakes
