Harry’s Bar & Grill will open for summer 2018 Memorial Day Weekend. At long last, you’ll be able to enjoy your favorite Harry’s dishes and cocktails. Can’t wait that long? Here’s how to make Harry’s California Chicken Sandwich at home.


1 1/4 Pounds organic, all-natural chicken breasts (seasoned and pounded, cut into 4 pieces.)

8 Slices Applewood-smoked bacon (cooked)

Guacamole (see recipe below)

Chipotle Mayonnaise (see recipe below)

Lettuce and tomato

4 brioche buns


Place chicken between two pieces of parchment paper. Pound with a rolling pin until an even thickness is achieved.

Slice each piece in half, so you have four chicken breast pieces.

Cook over medium heat until no longer pink.

Remove from heat and place chipotle mayo on each chicken breast.

Toast hamburger buns, and top with chicken, bacon, guacamole, lettuce and tomato.

Favorite Guacamole


2 Large ripe avocados

2 Tablespoons fresh lime juice

1 Large clove fresh garlic (pressed or finely minced)

1 Tablespoon chopped fresh cilantro

2 Whole green onions (chopped)

1 Canned whole chilies (rinsed, seedes, and chopped)

2 Roma tomatoes (peeled, seeded,and chopped)

Sea salt & fresh ground black pepper (to taste)


Cut, pit, and scoop out the flesh from the avocados. Place in a bowl and mash with a fork.

Stir in lime juice, garlic, cilantro, green chilies, green onions, and tomato. Season to taste with salt and pepper.

Spoon into a serving bowl and serve with tortilla chips.

Chipotle Mayonnaise


1/2 cup mayonnaise

1/4 cup sour cream

2 chipotle chiles from 1 can of chipotles in adobo

2 tablespoon freshly squeezed lime juice


Place mayonnaise, sour cream, lime juice, and chipotles in jar of a blender. Puree until smooth and chipotles are completely chopped. Pour into an airtight container, cover, and store in the refrigerator until ready to use.

Serve with your choice of chips, sweet potato fries or a side salad.
